- Coconut Custard Pie

- 4 slightly beaten eggs
- 1/2 cup sugar
- 1/4 tsp. salt
- 1/2 tsp. vanilla
- 2 1/2 cups milk, scalded
- 1/2 cup flaked coconut
- 1 9-inch unbaked pastry shell

- Blend eggs, sugar, salt, and vanilla. Gradually stir in scalded milk.
- Pour into pastry shell. Sprinkle with coconut.
- Bake at 350F for 35 to 40 minutes (until knife inserted halfway between
- center and edge comes out clean. Cool on rack and then chill.
